Oven roasted tomatoes

I've really gotten into roasting my own tomatoes for tomato pesto. Took some home to my parents a while back, and my mom wanted the recipe. It's quite simple, actually. And you can probably find a better recipe most anywhere. Basically, the roasted tomatoes will taste like whatever spices they're baked w/. So the taste can vary dramatically depending on spices. I like to play around w/ it.

Soak halved tomatoes in a mix of Balsamic vinegar, a bit of olive oil, and some spices (I like black peppercorn & red pepper) over night. To bake, cover a baking pan w/ tin foil sheet, and set the tomato halves (seeds up) on the foil (you can save the marinade for future use). Preheat oven to 350°F.

Sprinkle tomatoes liberally w/ spices (I like oregano, basil, red pepper, thyme). Perhaps even some roasted garlic (a little bit from the stuff that comes in jars, already oven roasted). Then put in the oven to roast for about 90 minutes. About halfway through, pull out and pour some olive oil over the tomatoes, then continue roasting.

I pull them out of the oven and let them sit for a few minutes. Then place the roasted tomatoes in a glass jar (I like empty pasta sauce jars). Fill the jar w/ olive oil until the tomatoes are fully covered. Add more oregano & red pepper before sealing the lid and letting it sit, warm. It's ready for use the next day.

To make tomato pesto, take out tomato halves as needed, place in a small food processor & add some of the olive oil (& more spices if wanted). It makes a rich paste.

It's great stuff. Miguel should find a way to market the stuff. Miguel, you can always roast tomatoes in between writing your dissertation. Some famous guys make salad dressing or baked beans, why not you roasting tomatoes. Seriously these are great! I'll expect you to bring some home each time you come! Or make me a batch for Christmas.
